I have just read in my weekly Insulite newsletters that grilling your chicken can make it release toxic chemicals linked to Type 2 Diabetes and Alzheimers. I love cooking my chicken on my foreman grill its quick and easy, does this mean that I need to throw it away? Can I only steam my chicken? Can I still cook it in a skillet with some wine, or olive oil/avocado oil?

I just looked up a few studies, and unfortunately, it looks as if it would be better for diabetics to avoid eating lots of grilled and broiled foods. This is something that is still being studied, but it looks like the facts are quite strong.

This doesn't mean you have to throw out your grill! However I'd suggest limiting your grilling to an indulgence (if you are a diabetic), and a once a week (or so) occasion if you aren't diabetic. As for the skillet, I'd limit it too (I cringe as I type it because it doesn't please me either!).
